Garlic Parmesan Chicken Wings with Buffalo Bleu Cheese Dip

By now you’ve probably come to realize that I quite like chicken wings.  So it also should not be a surprise that I jumped on the band wagon when I was asked by a fellow expat to create these Garlic Parmesan Chicken Wings for her.Garlic Parmesan Chicken Wings with Buffalo Bleu Dip ~ Living the Savory Life

You see, there are creature comforts for all of us that we miss once we move away; whether it be to a neighboring state, across the country or across the globe.  NY bagels, maple syrup, dim sim, your favorite sushi restaurant, that local pizza joint on the corner, the bakery down the street….  You know what I’m talking about.  We all have one.

Well, these wings are my take on what she described to me.  Hopefully she likes them!  Hopefully they feel a little like home.  At the very least, with all the garlic in it, the vampires should stay away!That's a lotta garlic! ~ Living the Savory Life

What I have done here is keep the wings a bit more on the mild side with a buttery, garlicy, cheesy sauce and spiced up the dip.  A bit of a role reversal.  I went with the traditional bleu cheese spiced up for the dip but if bleu cheese isn’t your thing feel free to substitute ranch dressing.

These wings get cooked completely naked with just some salt and pepper.  I chose not to pop them back in the oven after I drenched them in the sauce because the sauce has a ton of garlic in it.  Garlic + burnt = really bad.  Garlic can burn very easily and once it is burnt it leaves a really bitter taste to the dish.  So instead I just tossed with the sauce when they came out of the oven, arranged them on my plate, poured leftover sauce over the top and added extra parmesan.

Ready. Set. Roll up your sleeves, pop the top off your beer, turn on the ballgame and enjoy!

 

Garlic Parmesan Chicken Wings with Buffalo Bleu Cheese Dip

Ingredients

Bleu Cheese Dip

  • 2.5 oz 70g bleu cheese crumbled
  • 3 Tbsp mayonnaise
  • 3 Tbsp sour cream
  • 3-6 Tbsp buffalo sauce such as Texas Pete or Frank's Red Hot more or less to taste

Wings

  • 2 lbs ~1kg wings
  • Salt
  • Freshly ground pepper
  • Wing sauce recipe below
  • Parmesan cheese

Wing Sauce

  • 1/4 c minced garlic 8-10 cloves
  • 1/2 c butter
  • 1/2 tsp red pepper flakes more for more heat
  • 1/4 c grated parmesan cheese

Instructions

Bleu Cheese Dip

  1. Mix bleu cheese, mayo and sour cream.
  2. Add a couple tablespoons of hot sauce at a time and stir to combine. Taste and add more hot sauce as desired.
  3. Refrigerate while the wings are baking. Sauce will thicken as it cools.

Wings

  1. Preheat oven to 400*F (200*C).
  2. Line a cookie sheet with baking paper and spread the chicken wings in a single layer.
  3. Season with salt and pepper.
  4. Bake on the top rack of the oven for 15 minutes.
  5. Flip and bake and additional 15 minutes or until cooked through.
  6. Toss with wing sauce, sprinkle liberally with extra parmesan cheese and serve with buffalo bleu cheese dip on the side.

Wing Sauce

  1. In a small saucepan melt butter on low.
  2. Add garlic and red pepper flakes.
  3. Cook on low for about 15 minutes until the garlic softens stirring occasionally.
  4. Stir in parmesan.
